Chicken and Ham Terrine Recipe

(Low-Fat Recipe)

Ingredients:  Serves 10,  Oven: Preheat to 180C

450 g (1 lb) diced chicken breast meat

450 g (1 lb) gammon, finely chopped

225 g (8 oz) lean smoked back bacon, finely chopped

150 ml ( pint) dry white wine

6 green peppercorns, crushed

2 tablespoons chopped fresh herbs (parsley, thyme, oregano)

salt and freshly ground black pepper

 

Method:

Mix together all the ingredients in a large bowl.  Season well with black pepper and a little salt (the gammon will add plenty of salt during cooking).  Press the mixture into a 1 kg (2 lb) loaf tin or terrine mould.  Stand the mould inside a roasting tin and pour sufficient water around to come halfway up the sides of the mould.  Cover with foil and bake in the center of the oven for 1-1 hours.  Remove from the oven, allow to cool, then refrigerate overnight.  Serve with salad leaves and lemon wedges.

 

Note:  Traditional terrines and pts contain a large proportion of added fat in the form of either butter or dripping.  Try this low-fat alternative as a starter or as part of a buffet.
