Chicken Kurma Recipe

(Healthy Food Recipe)

Ingredients:  Serves 5

600g chicken breast, discard skin

 

Ingredients to be blended with cup water:

50g shallots, peeled

5g garlic, peeled

20g ginger, peeled

 

50g kurma spice

175ml (1 cup) coconut milk, from grated coconut

175ml (1 cup) low fat milk

175ml (1 cup) water, to mix with kurma spice

30g (5 tablespoons) fried onion

20g (2 tablespoons) vegetable oil

90g (1) onion, sliced

2cm cinnamon bark

2g (2) cardamom seeds

2g (2) cloves

20g (2) screwpine leaves, folded

5g (1 teaspoon) salt

200g potatoes, quartered

Garnishing:

4 tomatoes, quartered

1 red chili, cut lengthwise

Method:

Marinate chicken with blended ingredients, fried onion, low fat milk and coconut milk for 30 minutes.  Heat oil.  Stir-fry sliced onions with cloves, cardamom and cinnamon bark until fragrant.  Add in chicken, kurma spice mixed with water and cook.  Add in screwpine leaves and salt.  Lower the heat and cook until chicken is tender.  Add in potatoes and cook until soft.  Add tomatoes and red chilies.  Serve.
