Duck with Black Cherries Recipe

(Low-Fat Duck Recipe)

Ingredients:  Serves 4,  Oven: Preheat to 200C

4 x 175 g (4 x 6 oz) duck breasts

1 x 270 g jar morello cherries

few sprigs fresh thyme

150 ml ( pint) orange juice

2 teaspoons arrowroot

chopped fresh mint leaves

salt and freshly ground black pepper

 

Method:

Prepare the duck by removing all the skin with a sharp knife.  Season each breast well with salt and pepper.  Using a sharp knife, slash the duck several times and place in an ovenproof dish.  Heat the cherries, thyme and orange juice in a saucepan.  Mix the arrowroot with a little cold water to a paste and stir into the sauce.  Simmer until thickened, then pour the sauce over the duck.  Place in the oven for 10-12 minutes.  Remove the duck from the oven and allow to rest for 5 minutes.  Strain the juices from the roasting dish into the sauce and stir in the chopped mint.  Carve the duck into pieces and serve with the hot cherry sauce and green vegetables.

 

Note:  A delicate fruity sauce rounds off this exotic dish.  Duck meat without the fatty skin is very lean.
