Fisherman's Mackerel Recipe

(Fresh mackerel fillets smoked and cooked quickly, satisfyingly rich

to eat because of the oils they contain)

Ingredients:  Serves 4

8 mackerel fillets, each about 4 oz (115 g)

Freshly ground black pepper

2 tablespoons lemon juice

Sprigs of fresh dill and lemon wedges to garnish

 

Method:

Rinse the mackerel and pat dry with kitchen paper.  Season on both sides with pepper.  Line the grill pan with foil.  Arrange the opened mackerel skin side down on the grill rack.  Grill under a moderate heat without turning for 10-15 minutes, according to their thickness.  The flesh should flake easily and be very slightly browned; do not overcook or the fish will be dry.  Turn the mackerel over one by one onto a warmed plate, peel off the skins, then arrange them, grilled side up, on a warmed serving dish and sprinkle with the lemon juice.  Garnish with the sprigs of dill and lemon wedges.

 

Note:  Ratatouille and light rye bread go well with the full-flavored fish.
