Grilled Salmon with Horseradish Sauce Recipe

(Low Carbohydrate Recipe)

Ingredients:  Serves 4

150 g Greek yogurt

150 g low-fat natural yogurt

3 scallions, trimmed and chopped

10 radishes, washed and chopped

3 level tablespoons freshly grated horseradish

1/2 level teaspoon ground cumin

Freshly ground black pepper

1 tablespoon olive oil

4 salmon steaks, each about 115 g

1 tablespoon lemon juice



To make the sauce, mix the yogurts, onions, radishes, horseradish, cumin and pepper in a bowl.  Cover and refrigerate.  Line the grill pan with foil, oil the rack and heat the grill.  Rinse and dry the salmon and lay on the rack.  Mix the remaining oil with the lemon juice, season with pepper and trickle half the mixture over the steaks.  Cook under a medium grill for 2-3 minutes, until lightly browned.  Turn the steaks over, trickle the remaining oil mixture over them and grill for a further 2-3 minutes, or until the steaks are opaque right through the center.  Serve the salmon on warmed plates with a spoonful of the chilled sauce beside each steak.  Saffron-tinted rice and steamed courgettes are perfect foils for the rich salmon.  If you cannot find fresh horseradish, use 1 level tablespoon of Dijon mustard in the sauce instead, but it will have less character.


Note:  Grating horseradish for the sauce may bring tears to your eyes, but it gives an unmistakable piquancy to this simple dish of grilled salmon.
