Guacamole Recipe

(Healthy Fat Recipe)

Ingredients:  Serves 4

2 ripe avocados

juice of 1 lemon or lime

1-2 cloves of garlic, crushed

1-2 scallions, sliced finely, or a small

  grated onion or shallot

1 large tomato, skinned, seeded and

  chopped coarsely

teaspoon chili powder

tabasco sauce to taste

3 tablespoons of chopped coriander (cilantro)

  leaves

salt and freshly ground pepper to taste

For serving:  Chopped olives and walnuts to

  garnish, and a selection of raw seasonal

  vegetables cut into sticks or slices

Method:

Peel the avocados and remove the stones.  Place the flesh in a large bowl.  Add the juice of the lime or lemon.  Mash with a fork.  Add the other ingredients and taste to check the seasoning.  Serve garnished with the walnuts and olives.  Dip the fresh vegetable sticks and slices into the guacamole and enjoy the goodness.  Do not make guacamole too long before you want to serve it, as the avocado may discolor, though this will not affect the flavor.
