Lamb Cutlets with Herbs Recipe

(Low Fat Healthy Recipe)

Ingredients:  Serves 4

8 lamb cutlets, each about 4 oz (115 g), fat trimmed

2 cloves garlic, peeled and halved

1 tablespoon olive oil

1 level tablespoon chopped mixed fresh thyme, marjoram and rosemary, or 1 level teaspoon

  dried mixed herbs

Freshly ground black pepper

Fresh mint and lemon wedges to garnish

 

Method:

Lay the cutlets in a shallow dish and rub all over with the cut side of the garlic cloves.  Brush both sides of the cutlets with the oil, coat with the herbs and season with pepper.  Place the cutlets on the grill rack and cook under a high heat for 4 minutes on each side.  Arrange them on warmed serving plates and garnish with the mint and lemon.  Serve with new potatoes and a green salad, and let the diners remove any remaining fat.

 

Note:  To enhance the herb flavor of the cutlets, coat them 4-5 hours before cooking, cover the dish and put in the refrigerator to marinate.  For ease of preparation and freshness of taste, nothing beats young and tender lamb cutlets briefly grilled in a coating of lively herbs.
