Pepper Beef Recipe

(Low Fat Recipe)

Ingredients:  Serves 4

500 g beef steaks, cut into thin slices and marinated with salt,

  pepper and 2 star anise
500 ml water
3 cloves garlic, peeled and roughly chopped
2 large onions, peeled and thickly sliced
1 large carrot, peeled if desired and sliced
2 large potatoes, peeled if desired and cut like big chips (fries),

  then parboiled until half-cooked; replaceable with
a handful of baby potatoes
2 teaspoons ground black pepper
1 teaspoon ground white pepper
1 teaspoon sugar
Salt to taste
160 g green peas
1 tablespoon corn flour, mixed with a little water to make thickener

 

Method:

Boil beef in water until just tender.  Do not over boil.  Add garlic, onions and carrot.  Boil until liquid is reduced. Add potatoes and boil a few minutes more.  Add peppers, sugar and salt to taste.  Boil until further reduced. Add peas.  Add corn flour mixture to thicken.  Serve hot with steamed rice.
