Red Thai Curry Recipe

(Low Fat Curry Recipe)

Ingredients:  Serves 4

1 large red onion, finely chopped

2 garlic cloves, crushed

300 g (10 oz) fresh or frozen Quorn pieces

1 teaspoon ground coriander (cilantro)

1 teaspoon finely chopped lemongrass

1 red pepper, finely sliced

600 ml (1 pint) tomato passata

1 small red chili, finely sliced

1 Kaffir lime leaf

salt and freshly ground black pepper

1 tablespoon chopped fresh coriander

 

Method:

Preheat a nonstick wok or frying pan.  Add the onion and garlic and dry-fry for 2-3 minutes until soft.  Add the Quorn pieces and season well with salt and black pepper.  Stir in the ground coriander and lemongrass.  Add the remaining ingredients and bring to a gentle simmer.  Reduce the heat and allow to simmer for 10 minutes until the sauce has reduced slightly.  Just before serving add the chopped fresh coriander.

 

Note:  Quorn is a member of the fungi family and makes a good substitute for chicken and other meats especially in highly flavored curries.  Serve this curry on a bed of basmati rice or noodles.
