Mix the ground bay, cumin, coriander,
ginger and turmeric and rub into both sides of the pork slices.
Cover and leave to marinate at room temperature for 1 hour. Lay
the pork on the grill rack and cook under a hot grill for about 10
minutes, turning 3 or 4 times, until cooked through and golden brown.
Garnish with the lime and coriander.
Note: Braised fennel
or celery hearts and fresh noodles go well with this aromatic dish.
Grind the bay leaves thoroughly in a mortar with a pestle, or in an
electric coffee grinder. Fragments of bay are very sharp; they
can stick in the throat and cause choking.
