Spicy Prawn Masala Recipe

(Indian Low-Fat Recipe)

Ingredients:  Serves 4

1 large red onion, peeled and finely chopped

2 tablespoons tomato purée

600 ml (1 pint) fish or vegetable stock

1 tablespoon tamarind paste

4 kaffir lime leaves

450 g (1 lb) uncooked peeled prawns (shrimps)

2 tablespoons chopped fresh coriander (cilantro)

a little virtually fat-free fromage frais

 

Spice paste (ground together):

3 garlic cloves, peeled

3 teaspoons ground coriander (cilantro)

½ teaspoon ground turmeric

½ teaspoon ground fenugreek

2-3 small whole fresh chilies

seeds removed from 4 crushed cardamom pods

 

Method:

Make the spice paste by grinding all the ingredients in a food processor or liquidizer.  Scrape the paste into a bowl, then rinse out with a little stock.  In a non-stick pan dry-fry the onion until soft.  Add the spice paste and cook for 2 minutes, stirring continuously.  Add the remaining ingredients, except the coriander and fromage frais, and simmer gently for 15-20 minutes until the sauce thickens and the prawns are cooked through.  Just before serving, remove from the heat and stir in the coriander and fromage frais.
