Spicy Sour Yam Stalk Recipe

(Healthy Food Recipe)

Ingredients:  Serves 5

1 whole yam plant (300g), including yam and stalk

Pounded finely:

2cm fresh turmeric

5 bird's eye chilies

Ingredients B:

4 tablespoons fermented durian (tempoyak)

20g dried/fresh shrimps

2 pieces dried tamarind

3 stalks polygonum (kesom) leaves (select small leaves

  and stalks)

2 teaspoons salt

5 cups water

Method:

Clean and peel the skin from the yam stalk.  Cut into 5cm length and cut yam into cubes.  Blanch stalk and yam for approximately 3 minutes and drain.  Mix pounded ingredients, ingredients B and water in a pot.  Mix well and cook until boiling.  Add stalk, yam and salt.  Mix well and leave for a while.  Lower heat and cook until the yam is soft.  Remove and serve.

Note:  Fermented durian (tempoyak) can be adjusted according to taste and the type of tempoyak used, sour or sweet.  This recipe is one of the many variations of cooking vegetables.  Apart from being tasty, it is also low in fat.  Weight per serving is 160g.
