Turkey Balsamico Recipe

(Moist Turkey Balsamico with Mediterranean flavors

best served with Tagliatelle or Spaghetti)

Ingredients:  Serves 4

2 level tablespoons plain (all-purpose) flour

Freshly ground black pepper

4 turkey breast escalopes, each about 4 oz (115 g), beaten out very thin

3 tablespoons olive oil

2 large red capsicums, de-seeded and cut into strips

3 cloves garlic, peeled and crushed

oz (15 g) fresh basil, chopped, or 1 teaspoon dried basil, crumbled

2 tablespoons balsamic vinegar

Basil sprigs to garnish



Combine the flour and pepper on a plate and press the turkey escalopes into the mixture, turning to coat them evenly all over and shaking off any excess.  Heat 2 tablespoons of the oil in a large, heavy-based frying pan and fry the escalopes in it over a moderate heat for 2-3 minutes on each side.  Lift them onto a heated dish and keep hot.  Add the remaining oil to the pan along with the red capsicums and garlic.  Reduce the heat and simmer for 5 minutes, stirring occasionally, until the peppers are tender.  Stir in the basil and vinegar and raise the heat to moderate.  Put the turkey back in the pan and cook, stirring, for 2 minutes.  Arrange the escalopes on a hot serving dish, pour on the sauce and garnish with the sprigs of basil.


Note:  To beat out the escalopes, arrange them well apart between two wetted sheets of greaseproof paper on a sturdy chopping board and hit them with a rolling pin.
