Apple and Sultana Strudel Recipe

(An apple pie without the high-fat crust)

Ingredients:  Serves 8, Oven: Preheat to 200C

4 large cooking apples

6 sheets filo pastry (30cm x 20cm / 12inch x 8inch)

1 egg, beaten

2 tablespoons demerara sugar

3 oz (75 g) sultanas

2 teaspoons ground cinnamon

icing sugar to dust



Lightly grease a nonstick baking tray with sunflower oil spray.  Peel, core and slice the apples into a large bowl of salted water.  This will help to prevent the apples from turning brown.  Rinse the apples well in fresh cold water and place in a large saucepan.  Cook over a low heat for 15 - 20 minutes until soft.  Spoon into a bowl and allow to cool.  Separate the filo pastry sheets.  Place one onto a tea towel and brush with beaten egg.  Continue adding the remaining sheets, brushing each layer with egg.  Spread the cooked apple over the pastry leaving a 2.5 cm (1 inch) border around the edge.  Sprinkle with the sugar and sultanas and dust with the cinnamon.  Fold in the two short sides of the pastry.  Roll up the pastry like a Swiss roll and place on the prepared nonstick baking tray.  Brush the top with egg and bake in the oven for 20 minutes until crisp and golden.  Remove from the oven.  Cut into slices and serve hot with a dusting of icing sugar.


Note:  This strudel will freeze well as a whole dessert or you can slice it into portions and reheat from frozen.  Allow 30 minutes if cooking from frozen.  Serve with virtually fat-free fromage frais.
