Pizza Muffins Recipe

(Healthy Recipe)

Ingredients:  Serves 4

6 fl oz (175 ml) tomato sauce

8 wholemeal muffins

2 oz (60 g) grated mature Cheddar cheese

1 oz (30 g) grated Parmesan cheese

4 anchovy fillets, drained and chopped

4 stoned black olives, thinly sliced

1 level tablespoon chopped fresh basil or oregano to garnish

 

Method:

Bring the tomato sauce to the boil in a small saucepan, simmer for 2 minutes and set aside.  Halve the muffins and lightly toast the cut sides only under a hot grill.  Sprinkle the Cheddar evenly over the muffins and grill for 1-2 minutes, until the cheese melts.  Spread the tomato sauce over the Cheddar and sprinkle on the Parmesan.  Return the muffins to the grill for 2-3 minutes, until the cheese is lightly browned and bubbling hot.  Scatter the chopped anchovies and olives on top and garnish with the basil or oregano before serving.
