Greek Salad Recipe

(Low Fat Recipe)

Ingredients:  Serves 4

cos lettuce, trimmed and washed

8 oz (225 g) young spinach leaves, trimmed and washed

small cucumber, diced

2 oz (60 g) cottage cheese

2 oz (60 g) feta cheese, rinsed with cold water and cut into small pieces

2 level tablespoons chopped fresh mint or 1 level teaspoons dried mint

1 teaspoon virgin olive oil

1 teaspoon lemon juice

1 clove garlic, peeled and crushed

2 medium black olives, stoned and sliced

Freshly ground black pepper

 

Method:

Dry the lettuce and spinach leaves gently with kitchen paper or a salad spinner and tear them into small pieces.  Mix with the cucumber, cottage cheese, feta and mint in a salad bowl.  Blend the oil with the lemon juice and garlic, mix in the olives and season with pepper.  Pour the dressing over the salad, toss and serve.

120 calories

8 g total fat (3 g saturated fat)

4 g carbohydrates

2 g fiber

400 mg sodium
