Cottage Cheese and Basil Dip Recipe

(No Fat Recipe)

Ingredients:  Makes 18 level tablespoons

10 oz (275 g) cottage cheese, drained

6 medium radishes, trimmed and finely chopped

2 level tablespoons chopped fresh basil, or 1 level teaspoon dried basil

1 clove garlic, peeled and crushed

level teaspoon finely grated lemon rind

Basil leaves and 2 - 3 radish flowers to garnish

 

Method:

Blend the cheese in a food processor for 20 seconds, or pass it through a nylon sieve.  Stir the chopped radishes, basil, garlic and lemon rind into the cheese.  Spoon the mixture into a serving bowl, cover and refrigerate for an hour, or up to 3 hours, before serving.  Garnish the dip with the basil leaves and radish flowers, and serve with warm muffins, toast or raw vegetables.
