Vinaigrette Dressing Recipe

(Low Fat Recipe)

Ingredients:  Makes 4 tablespoons, to dress a salad for 6

1 level teaspoon Dijon or whole-grain mustard

Freshly ground black pepper

1 clove garlic, peeled and crushed

2 tablespoons chopped fresh parsley

1 tablespoon cider vinegar or wine vinegar

2 tablespoons extra virgin olive oil

 

Method:

Mix all the ingredients in a bowl with a small wire whisk or wooden salad server, until blended and slightly thickened.  For the best flavor, make the dressing jut before you need it.  Use balsamic or raspberry vinegar for a mellower flavor.  For a delicately flavored salad, you can use a light olive oil or corn oil instead of the distinctively flavored virgin olive oil.  For a more stronger flavored dressing, use half walnut oil and half olive oil.

 

To vary the flavor, use lemon or orange juice instead of vinegar and add different herbs - basil, chives, marjoram, fennel, dill or lemon balm.  Do not over-chop them or the color and taste will be spoiled.  To give a spicy edge, add a little grated nutmeg, or ground cardamom seeds or cinnamon.
