Yoghurt Dressing Recipe

(Low Fat Recipe)

Ingredients:  Makes 12 level tablespoons to dress a salad for 8

4 level tablespoons Greek yoghurt

6 level tablespoons low-fat natural yoghurt

2 tablespoons lemon juice

1 level teaspoon Dijon or whole-grain mustard

Freshly ground black pepper

 

Method:

Mix the yoghurts, lemon juice and mustard in a bowl and season with pepper.  Serve immediately, or cover and refrigerate for up to 3 hours before using.

 

Use the dressing plain and simple, or flavor it with chopped fresh herbs, scallions, watercress, ground cardamoms or freshly grated nutmeg.  Use it to dress leafy salads, grated or chopped vegetables, cooked potato slices or pasta.
