Asian Baked Pumpkin Cake Recipe

(Kuih Labu Bakar Recipe)

Ingredients:  Serves 15, Oven: Preheat to 200 degrees Celsius

A500 g yellow pumpkin

200 g (1/2 cup) wheat flour

100 g (10 tablespoons) sugar

500 ml (2 cups) low fat milk

2 eggs (if without egg white, use 3 eggs instead)

Salt to taste

 

Method:

Remove skin from the pumpkin, cut into big pieces and steam until soft.  Mash the pumpkin to a fine paste and leave aside.  Beat sugar together with eggs.  Add low fat milk, salt and mix until sugar dissolves.  Sieve flour into a bowl.  Mix egg, sugar mixture and mashed pumpkin together and slowly add sifted flour to mix thoroughly.  Brush an aluminum pan of 20 cm diameter with a bit of oil.  Pour in the mixture.  Bake at preheated oven for 45 minutes until cooked and surface is golden in color.  Leave to cool completely before cutting into diamond-shaped.
