Ginger and Blueberry Crème Brulee Recipe

(Low Fat Desserts Recipe)

Ingredients:  Serves 4

2 tablespoons stem ginger

225 g (8 oz) blueberries

450 g 0% fat Greek yoghurt

4 tablespoons demerara sugar

 

Method:

Slice the stem ginger and place in a small saucepan.  Add the blueberries.  Place over a low heat until the fruit starts to pop.  Spoon into 4 ramekin dishes and chill.  When the fruit is chilled, preheat the grill until it is very hot.  Just before you are ready to serve, spread the yoghurt over the fruit, covering the fruit completely.  Sprinkle with the sugar and immediately place under the grill until the sugar caramelizes.  Serve straight away or allow to cool and serve cold.

 

Note:  A great combination of fruit and spice with a luxurious creamy topping.
