Golden Lemon Pudding Recipe

(Low Fat Pudding Recipe)

Ingredients:  Serves 4

3 tablespoons light brown sugar

4 egg whites

3 tablespoons low-fat fromage frais

3 tablespoons flour

2 tablespoons fine cornmeal (polenta flour)

2 teaspoons baking powder

3 tablespoons lemon marmalade

 

Method:

In a mixing bowl combine the sugar, egg white and fromage frais and beat well.  Fold in the flours and baking powder.  Lightly grease a 600 ml (1 pint) pudding basin with a little vegetable oil.  Place the lemon marmalade in the bottom of the bowl and pour the mixture over.  Cover the basin with food wrap.  Place in a steamer over a pan of boiling water and steam for 20 minutes or until the pudding is cooked.  Carefully remove the basin from the steamer and run a palate knife around the edge of the bowl to loosen the pudding.  Turn the pudding out onto a plate and serve with either low-fat fromage frais or low-fat custard.

 

Note:  This mixture makes a good-sized pudding, ideal to follow a light lunch or dinner.
