Pear and Lemon Brulee Recipe

(Low Fat Desserts Recipe)

Ingredients:  Serves 4

2 lemons

2 ripe dessert pears

2 tablespoons castor sugar

450 g (16 oz) 0% fat Greek yoghurt

4 tablespoons demerara sugar



Using the fine side of a grater, finely grate the lemons into a small bowl.  Cut the lemons in half, squeeze out the juice and place in the bowl.  Cut the pears in quarters, remove the center cores and the peel.  Place the quartered pears in the bowl, turning them to coat with the lemon juice to prevent them from discoloring.  Tip the lemons into a saucepan and add 300 ml ( pint) of water and the castor sugar.  Bring to the boil, then reduce the heat and simmer gently for 10-15 minutes until the pears are soft.  Lift the pears from the syrup and place on a chopping board.  Slice thinly and place in the bottom of 4 ramekin dishes.  Cover with yoghurt and smooth the tops with a knife.  Place in the refrigerator until ready to serve.  Preheat the grill until it is very hot.  Just before you are ready to serve, sprinkle the brulees with the demerara sugar and immediately place under the hot grill until the sugar caramelizes.  Serve immediately.


Note:  This luxurious dessert can be made in advance and kept in the refrigerator until ready to serve.  It is important to add the sugar just before grilling as it will start to dissolve on contact with the yoghurt.
