Strawberries Poached in Burgundy Recipe

(Low Fat Recipe)

Ingredients:  Serves 4

115 g (4 oz) demerara sugar

1 cinnamon stick

150 ml ( pint) Burgundy wine

350 g (12 oz) fresh small strawberries, hulled and rinsed

mint leaves to decorate

 

Method:

In a saucepan dissolve the sugar in 300 ml ( pint) water and bring to the boil, adding the cinnamon stick.  Add the Burgundy and bring the mixture to a gentle simmer.  Simmer for 10 minutes until the wine has reduced.  Remove the pan from the heat and add the strawberries.  Pour into a serving bowl and allow to cool.  Serve in glass dishes and decorate with mint leaves.

 

Note:  This recipe also works well with frozen strawberries.  Make up the hot wine mixture, pour over the frozen berries and allow to cool.  Serve with low-fat yoghurt or fromage frais.
