Strawberry and Vanilla Parfait Recipe

(Low-Fat Desserts Recipe)

Ingredients:  Serves 6

1 x 400 g can light evaporated milk, chilled overnight

225 g (8 oz) fresh strawberries

1 vanilla pod

75 g (3 oz) castor sugar

225 g (8 oz) virtually fat-free fromage frais

115 g (4 oz) Quark (low-fat soft cheese)

 

Method:

Using an electric mixer, whisk the evaporated milk on high speed until thick and double in volume.  Place the strawberries, reserving a few for decoration, into a liquidizer or food processor and pulse until chopped.  Using a sharp knife, split the vanilla pod lengthways, scrape out the black seeds from the center and add to the strawberries.  Mix together the sugar and strawberries, then fold in the milk until fully combined.  Carefully fold in the fromage frais and Quark and pour into a plastic freezer container or mould.  Cover and freeze for 4-5 hours until firm.  Remove from the freezer 10 minutes before serving.  Using a serrated knife dipped in boiling water, slice into portions.  Decorate with the reserved strawberries.

 

Note:  Light evaporated milk forms the base to this luxurious creamy dessert.  It is very important that the milk is completely chilled overnight in order to achieve the thick foam once whisked.
