Provencal Soup Recipe

(Olive oil, courgettes, tomatoes and garlic give the authentic character

of the French country kitchen to this colorful, fresh vegetable soup)

Ingredients:  Serves 4

1 tablespoon olive oil

4 tablespoons water

1 large onion, peeled and finely sliced

1 medium green pepper, de-seeded and chopped

1 clove garlic, peeled and chopped

1 stick celery, trimmed and finely chopped

8 oz (225 g) small courgettes, trimmed and thinly sliced lengthways

2 level tablespoons plain (all-purpose) flour

1 lb (450 g) ripe tomatoes, skinned and chopped

1 pint (570 ml) chicken or vegetable stock

1 tablespoon lemon juice

Flat-leaf parsley to garnish

 

Method:

Heat the olive oil and water in a large saucepan and cook the onion, pepper, garlic, celery and courgettes in it over a low heat for about 5 minutes, stirring occasionally.  When the water has evaporated, stir the flour into the vegetables and continue cooking for 3 minutes, stirring frequently.  Add the tomatoes, pour in the stock and bring to the boil, then cover and simmer for about 20 minutes.  Take off the heat, stir in the lemon juice and garnish with the parsley.  Serve the soup piping hot with french bread.
