Sweetcorn Chowder Recipe

(Low Fat Soup Recipe)

Ingredients:  Serves 4

1 tablespoon corn oil

1 medium onion, peeled and chopped

1 stick celery, trimmed and chopped

small red capsicum, de-seeded and cut into small dice

1 level tablespoon plain (all-purpose) flour

level teaspoon paprika

12 fl oz (340 ml) chicken or vegetable stock

12 oz (340 g) frozen sweetcorn kernels

7 fl oz (200 ml) skimmed or low-fat milk

1 teaspoons lemon juice

Freshly ground pepper

2 level tablespoons snipped fresh chives

 

Method:

Heat the oil in a large saucepan and cook the onion, celery and red capsicum in it, uncovered, over a moderate heat for about 5 minutes, until the vegetables are tender but not browned.  Mix in the flour and paprika, and cook for 3 minutes, stirring continuously.  Pour in the stock and continue to stir until the mixture comes to the boil and thickens.  Stir in the sweetcorn, cover, and simmer for 3 minutes.  Stir in the milk and lemon juice, and season with pepper.  Continue cooking over a low heat for 2-3 minutes until the soup is very hot, but take care not to let it boil or it will curdle.  Pour into a warmed tureen and sprinkle with the chives to serve.
