Creamy Basil Pasta Recipe

(Low-Fat Pasta Recipe)

Ingredients:  Serves 4

225 g (8 oz) penne pasta

1 vegetable stock cube

2 good bunches fresh basil

1 garlic clove, crushed

2 tablespoons virtually fat-free fromage frais

1 tablespoon grated fresh Parmesan cheese

salt and freshly ground black pepper

 

Method:

Cook the pasta in boiling salted water.  Meanwhile, in a small saucepan, dissolve the stock cube in 150 ml ( pint) of boiling water.  Remove the leaves from the basil and place in a food processor or liquidizer with the garlic and hot stock.  Blend until smooth to form a pesto.  Drain the pasta and return to the hot pan.  Add the pesto and fromage frais, mixing well together.  Season well with salt and black pepper.  Pour into a serving dish and sprinkle with Parmesan cheese.  Serve with a mixed salad or fresh spinach.

 

Note:  The low-fat pesto in this recipe is really tasty light sauce for all types of pasta.  It can be made in advance and stored in the refrigerator for up to a week.
