Linguine with Peas and Tuna Recipe

(Sweet green peas and meaty tuna in a light sauce mingle with thin strips of pasta,

which have the best texture when they are newly made)

Ingredients:  Serves 4

10 oz (275 g) fresh homemade linguine

1 tablespoon olive oil

1 level tablespoon plain (all-purpose) flour

pint (285 ml) skimmed or low-fat milk

7 oz (200 g) frozen peas

7 oz (200 g) tinned tuna in oil, drained and flaked

2 oz (60 g) grated Parmesan cheese

Freshly ground black pepper

 

Method:

Heat the oil in a large saucepan, mix in the flour and gradually stir in the milk.  Bring to the boil over a moderate heat, stirring all the time, then reduce the heat and continue cooking for 2 minutes, until the sauce thickens slightly.  Add the peas to the sauce and cook for 4 minutes.  Mix in the tuna and Parmesan and season with pepper.  Heat through gently, without boiling, for about 5 minutes.  Meanwhile, cook the linguine for 2-3 minutes and drain well.

 

Note:  Serve the linguine in heated bowls.  Side salads of grated carrots give a crisp finishing touch.
