Linguine and Tomato Pie Recipe

(Low Fat Recipe)

Ingredients:  Serves 4,  Oven: Preheat to 190C

1 tablespoon olive oil

8 oz (225 g) linguine

1 medium onion, peeled and finely chopped

3 cloves garlic, peeled and finely chopped

2 level tablespoons chopped fresh parsley

1 level teaspoons dried oregano

1 level teaspoon dried basil

1 talespoon lemon juice

Freshly ground black pepper

3 oz (85 g) ricotta or curd cheese

1 egg, size 2, beaten

1 lb (450 g) tomatoes, skinned and sliced

3 oz (85 g) grated low-fat Cheddar cheese

oz (15 g) grated Parmesan cheese

 

Method:

Grease a loose-bottomed or hinged-side cake tin 8 inch (20 cm) in diameter with a little oil.  Cook the linguine and drain well.  Meanwhile, heat the rest of the oil in a heavy-based saucepan and fry the onion and garlic in it over a moderate heat for about 5 minutes.  Mix in the linguine, scatter on the parsley, oregano and basil, sprinkle with the lemon juice, season with pepper and toss well.  Combine the ricotta or curd cheese and the egg with the linguine.  Spoon half the mixture into the prepared tin and press it down lightly.  Arrange half the tomato slices on top and scatter half the Cheddar over them.  Spoon the remaining pasta mixture on top and press down lightly.  Cover with the rest of the tomatoes and Cheddar and sprinkle with the Parmesan.  Cover and bake in the preheated oven for 30 minutes, then uncover and bake for a further 5 minutes, or until browned on top.  Leave the pie to cool for 10 minutes, then run a knife round the edge to loosen it from the tin.  Remove the side of the tin and slide the pie onto a warmed serving plate.  Cut the pie into wedges and serve with tomato sauce and a crisp green salad.  You can vary the pie by grating two courgettes into the linguine mixture.

 

Note:  Tomato layers and herbs moisten and flavor an original treat - narrow ribbons of tender pasta bound with egg to make an unusual cheese-topped pie.
