Macaroni Leeks and Tarragon Recipe

(Healthy Macaroni Recipe)

Ingredients:  Serves 4,  Oven: Preheat to 200C

7 oz (200 g) macaroni or macaroni spirals

oz (15 g) slightly salted butter

3 medium leeks, trimmed, finely sliced and washed

3 level tablespoons plain flour

1 pints (725 ml) skimmed milk

Freshly ground black pepper

2 level tablespoons chopped fresh tarragon

1 level teaspoon English mustard powder

4 oz (115 g) grated mature Cheddar cheese

1 level tablespoon wholemeal breadcrumbs

1 level tablespoons sesame seeds

Tomato slices and sprigs of fresh tarragon to garnish

 

Method:

Cook the macaroni and drain it thoroughly.  Meanwhile, melt the butter in a saucepan and gently cook the leeks in it, covered, for 3 minutes.  Mix in the flour, cook for 1 minute, then gradually stir in the milk.  Bring the sauce slowly to the boil, stirring continuously.  Season with pepper, mix in the tarragon and simmer for about 5 minutes.  Mix the mustard with a little of the sauce, then stir it back into the pan.  Fold in the Cheddar and macaroni.  Pour the mixture into a deep ovenproof dish.  Mix the breadcrumbs and sesame seeds and scatter them over the macaroni.  Bake in the preheated oven for about 25 minutes, until bubbling and lightly browned on top.  Garnish with the tomato slices and tarragon sprigs.

 

Note:  A crisp salad of frisee and lamb's lettuce makes a refreshing accompaniment.
