Mee Goreng Mamak Recipe

(Asian Indian Mamak-Style Fried Yellow Noodles)

Ingredients:  Serves 5

500 g yellow noodles, washed and drained

250 g chicken breast, cubed

300 g (3 pc) firm beancurd, grilled and sliced thinly

2 eggs, lightly beaten

30 g (3 tablespoons) soy sauce

2 stalks mustard leaves, cut into 2-inch lengths

100 g ( small size) round cabbage, sliced

100 g (2 cups) beansprouts, tailed, cleaned and drained

10 g (5) dried red chilies, grounded with 1/4 cup water

40 g (2 tablespoons) tomato ketchup

180 g (2) big onions, peeled and sliced

20 g (3 pips) garlic, peeled and sliced

20 g (2 tablespoon) vegetable oil

2.5 g ( teaspoon) salt or to taste

2 potatoes, peeled, cut into bite-sized chunks and boil until just soft

2 tomatoes, cut into small squares

1 fresh red chili, deseed and cut into rings for garnishing

lettuce, cut into fine strips for garnishing

3 calamansi, cut into halves for garnishing



Heat vegetable oil and stir-fry onion and garlic until fragrant.  Add grounded chilies and stir over medium heat.  Add chicken and stir fry until cooked.  Add in beancurd, eggs and potatoes.  Stir well, add cabbage, beansprouts, noodles, soy sauce, salt and tomato ketchup.  Stir again.  Add tomato and stir to mix well.  Cook for 1 minute and dish onto serving plate.  Garnish and serve.
