Stir-Fried Yellow Noodles with Shrimps Recipe

(Chinese Low Fat Noodles Recipe)

Ingredients: 

600 g Hokkien or yellow noodles

15 (750 g) raw large shrimps, shelled and de-veined

1 tablespoon peanut oil

500 g baby bok choy

2 tablespoons sweet chili sauce

cup (60 ml) chicken stock (please refer to All Healthy Soups Recipes)

2 tablespoons lime juice

1 clove garlic, peeled and crushed

1 teaspoon soy sauce

 

Method:

Pour boiling water over noodles in large heatproof bowl.  Separate noodles with fork and drain in a colander.  Leave aside.  Wash bok choy and cut into 2-inch lengths.  Heat oil in a wok or large frying pan and stir-fry garlic until aromatic.  Add shrimps and fry until they just changed color to pink.  Add noodles, bok choy and combined remaining ingredients.  Stir-fry vigorously until bok choy just wilts and shrimps are cooked through.  Serve hot.
