Tomato and Lemon Penne Recipe

(Low-Fat Penne Recipe)

Ingredients:  Serves 4

225 g (8 oz) penne pasta

1 red onion, finely chopped

2 garlic cloves, crushed

1 red pepper, seeded and finely sliced

1 x 400 g can chopped tomatoes

1 red chili, seeded and finely sliced

zest of 1 lemon

8-10 basil leaves, shredded

salt and freshly ground black pepper

lemon segments to garnish

 

Method:

Cook the pasta in boiling salted water.  Meanwhile, preheat a non-stick frying pan, add the onion and dry-fry for 2-3 minutes until soft.  Add the garlic and red pepper and cook for 2-3 minutes more.  Add the tomatoes, chili and lemon zest and bring the sauce to a gentle simmer.  Season to taste with salt and black pepper.  Drain the pasta and pour into a serving dish.  Spoon the sauce over the pasta and sprinkle with the shredded basil leaves.  Garnish with the lemon segments and serve with a mixed salad.

 

Note:  Fresh lemon adds a great finishing touch to this simple spicy pasta sauce.  To cool it down slightly just before serving, you can stir in a little virtually fat-free fromage frais.  This also makes a creamier sauce.
